So I checked into the Thermopop that everyone talks so highly of and I wound up buying the Thermoworks RT600c. It's the cheaper line from the same company but works great for only $20. It's almost as accurate as the high end and can take a reading in 5secs.
I buy from Amazon a lot but this one I had to buy straight through their website because the same model on Amazon for whatever reason is like $60

Taylor for less than $10.00. It's fast and accurate enough between freezing and boiling temps. I've been using it for over 5 years (back when they were selling for $14). It's going to take you about 8-10 seconds to get a good reading.

I just picked up a Thermopop too (last week). It's much faster than the Taylor and will become my go to digital thermometer going forward.

Taylor's are, in my opinion, complete trash. Thermopop or Javelin are by far the best in the $20 range.

Thermopop has been amazing for over a year. Love it.

Lavatools pt12 javelin instant read digital. It rocks.

Anything by Thermoworks is great. In fact, we just calibrated our oven last week (in prep for T-giving). I used a Thermoworks probe and an older probe of a different brand. The Thermoworks was faster and more responsive throughout the testing; the other one would catch up eventually, but was waaaaay slower. My Thermoworks probe can also be calibrated--an excellent feature. Definitely a top-notch product.

Consider an infrared remote reading digital thermometer. About $15 on ebay. Only reads surface temp but does it one second to nearest 0.1 degrees. Endlessly useful in the kitchen. I use it to flip steaks when upper surface reaches 90 F.

Thank you. I will check them out.

Do a search, this gets asked a lot. In general a company called ThermoWorks makes the best kitchen thermometers.
For general use you're best off with an instant read thermometer, look for something that reads fast and accurate with a small tip to make the smallest holes in your food. A leave-in probe thermometer is useful for roasts. IR thermometers are neat gadgets but near useless for most cooking.

I don't trust Amazon reviews.
